Preparation

  1. Step 1

    Remove the individual leaves from the endive. Wash, pat dry and arrange on a plate.

  2. Step 2

    Open can of sardines. Drain oil. Mix in bowl with sour cream, lemon juice, cilantro, salt and pepper.

  3. Step 3

    Fill half of each endive leaf with mixture. Arrange in a circular pattern on plate.

  4. Step 4

    Garnish with lemon zest and lemon wedges. Enjoy!

Yield: 4 servings

  • 1 endive

  • 1(4.5-ounce) tin oil-packed sardines

  • 1 tablespoon chopped cilantro

  • 2 tablespoons 2% fat sour cream

  • Grated zest of a lemon

  • 1 lemon, squeezed

  • Salt and pepper to taste
